There is something about Easter that really brings out the kid in me.

I start wanting to decorate eggs and I find myself wishing that the Easter Bunny still brought me a big basket filled with goodies.

Most of all, I start wanting to bake wonderful treats like these Easter Bunny Cupcakes!

You can make them any flavor you want them, of course, as long as it goes well with white frosting.

Along with that fluffy white frosting, you gather goodies like Marshmallows, Mini Jelly Beans, Pink Sparkling Sanding Sugar, and even some coconut flakes if you want to make your bunny fur look really cool!

Another fun thing about these Easter Bunny Cupcakes is that you can get the family involved.

Pile all your decorating goodies in the center of a table and let your kids help you make these lovely little bunny cupcakes.

To save time, we’ve used a box cake mix and icing to make these cupcakes.

We’re using Pillsbury, but feel free to use your favorite mix.

The recipe comes together quickly this way which is great if you need to make a large batch for your Easter event.

Ingredients you need to make Easter Bunny Cupcakes

  • 1 Boxed Cake Mix plus the ingredients to make it (or you can make your favorite cupcake recipe)
  • 1 tub of white frosting
  • Marshmallows
  • Mini Jelly Beans

You will also need these tools:

  • Star Icing Tip (or a grass tip works well too)
  • Pink Sparkling Sanding Sugar

How to make Easter Bunny Cupcakes

  • Bake your cupcakes per the instructions on the mix or for your favorite recipe.
  • Allow them to cool.
  • While your cupcakes are cooling, cut your marshmallows diagonally to make the ears.

  • Dip the cut side of the marshmallows in the pink sparkling sugar.

  • Frost your cupcakes using the star or grass tip.

Pro Tip:  If you don’t want to pipe your icing, you can spread the frosting with a knife and then roll the cupcakes in coconut flakes to mimic the bunny fur.
