I’ve always enjoyed making infusions, and this one is so simple. I grew up in Kentucky, so making infusions reminds me of my friends who had “family recipes” of various types of wine and spirits. They were all doctored up to taste, and my they were delicious. So I hope you enjoy this since it reminds me of home.
This particular recipe is courtesy of Sparkling Ice, a new collection of sparkling waters, lemonades and teas. They really do make it easy to mix up a nice sparkling cocktail.
- Serves: 12
- Serving size: 4 oz

- 750 ml bottle aged rum
- ½ cinnamon stick
- 1 clove
- 1 cardamom pod
- 3 allspice berries
- 1 vanilla bean
- pinch of freshly ground nutmeg
- 1 star anise pod
- Sparkling Ice Lemon Lime
- Blackberries, for garnish
- Combine rum, cinnamon stick. clove, cardamom, star snise, allspice berries, and nutmet in an airtight jar.
- Split vanilla bean and scrape seeds into jar along with the bean pod.
- Close jar and allow infusion to sit in a dark place for at least 3 days.
- Strain rum into an airtight jar with a fine-mesh strainer, discarding spices.
- Over ice, pour 2 ounces of rum infusion
- Top with Sparkling Ice Lemon Lime and garnish with blackberries.
